From Scratch: Energy Balls

I’m not great at finding time to prepare food from scratch. More often than I should, I get prepared food from the co-op for meals when I’m working all day, and rely on snacks like Lara bars for quick energy. Tasty, but expensive.

A few weeks ago, my sister sent me this recipe for energy balls from Mothering magazine, and I’ve found that they’re a great substitute for pre-packaged energy bars. They basically have the same ingredients as Lara bars, and you can switch things up by subsituting other seeds/dried fruit/nut butters. Anyway, enjoy! (Note: the original recipe calls for raw seeds and raw nut butter, but if you’re not doing the raw thing, these are just as good (and cheaper) with non-raw seeds and nut butter. Plain ol’ vegan, then.)

Energy Balls

1/4 cup sesame seeds

1/4 cup sunflower seeds

1/2 cup raisins

1/2 cup dates

1/2 cup almond butter

Blend seeds and dried fruit in a food processer. Then add almond butter and blend again.  Roll into balls. Keep refrigerated (but once chilled, they’re fine in your bag for a few hours if you’re on the move).
